The experience
The class opens with a tasting of olive oil, balsamic vinegar and bread paired with wine, before hands-on instruction in fresh egg pasta made with a pasta machine and authentic tiramisu made from scratch, all in the chef’s private loft rather than a restaurant or cooking school.
Two sauces round out the pasta course — a classic tomato pomodoro and a creamy Parmigiano Reggiano — before the group sits down together to eat what they made, with Italian wine or water alongside, in a small and sociable group capped at eight.
